Bragg Creek Arts Festival

The CountryWood Retreat & Conference Centre is thrilled to be participating in the Bragg Creek Arts Festival. Join us on the long weekend to check out the work of our talented local artists. The CountryWood is now open “After Hours”

This weekend, The CountryWood Retreat & Conference Centre (36 White Avenue, Bragg Creek) will host the last of our summer weekend menus for our “After Hours” Cafe. We will have a slightly different format, that will allow us to serve wine. Our menu will be:

Chicken Marsala, garlic mashed potatoes, seasonal vegetable (leaning toward asparagus or green bean) and yams.

Price is $35 and includes a buffet style dinner with above, plus dessert and a non-alcoholic beverage. We will have two desserts to choose from. One will be our pumpkin gingerbread pudding (yes – the one from Taste of Bragg Creek) served warm with caramel sauce and ice cream. The other dessert is still being decided upon.

We will have beer and wine available for an extra charge, for those who would like.

To reserve a space for Friday (Sept 1) or Saturday (Sept 2), please call Heather at 403-949-8466. The dinner will begin at 6:30 pm.

Red Thai Curry – red curry, coconut milk, sweet bell peppers, spinach, and asparagus. Topped with mango and cilantro or mint – served over Thai Jasmine rice, with flatbread

Green Thai Curry – green curry, coconut milk, sweet bell peppers, baby corn, and peas. Topped with bean sprouts and cilantro or mint – served over Thai Jasmine rice, with flatbread

Thai Pineapple Curry – pineapple, sweet bell peppers, onions, peas, bean sprouts and a hint of yellow curry. Topped with mint – served over Thai Jasmine rice, with flatbread

* all curries are dairy, gluten and nut free – $15 each, add chicken for $2

Desserts: $8 each

Sour Cream Lemon Pie – served with whipped cream

Here’s our menu for this weekend (July 28 and 29). We hope you can join us for round 2 of the Buddha Bowls!

– Greek Bowl (brown rice, cherry tomatoes, peppers, chickpeas, kalamata olives, feta cheese) – served with lemon wedge, tzatziki dressing and flatbread. You can add chicken or tofu.

– Vietnamese Bowl (rice noodles, cucumber, pickled carrots, peppers and peanuts) – served with vegetarian spring rolls, lime wedge and Asian dipping sauce. You can add chicken or tofu.

– Honey-Garlic Shrimp Bowl – (brown rice, shrimp, spinach, avocado slices, peppers and cherry tomatoes) – served with lemon wedge, flatbread and honey-garlic dressing.

Join us for dinner from 6:30 pm to 9:30 pm on Friday and Saturday evening – 36 White Avenue (The CountryWood Conference & Retreat Centre). We’ll have dessert, iced and pressed coffee available to finish off your meal.

It’s that time again. We’re hard at work in the kitchen preparing the menu for this weekend:

Chicken Enchiladas – stuffed with shredded chicken, rice, black beans, corn and roasted peppers. Topped with cheese, cilantro and salsa verde.

Prawn Enchiladas – stuffed with roasted prawns, chopped cabbage, spinach, carrot and avocado. Topped with a jalapeno crema sauce and lime zest.

For dessert:

Sour Cream Lemon Pie with Whipped Cream This has become a favorite!

Apple Pie with Vanilla Ice Cream.

Holy Buddha Bowls Batman! Apparently folks really loved the idea of our ethnic bowls of goodness. Luckily we had enough food for all, although we did run out of the Strawberry Pie and Chocolate Brownie later in the evening. No fear, we are off for more supplies and then the cooking fest shall begin.

Tonight (Saturday July 15) we will open from 6:30 pm to 9:30 pm. Join us at The CountryWood – 36 White Avenue. The same menu will be offered again tonight:

Thai Bowl (rice noodles, red cabbage, roasted peppers, carrots, snow peas, mangoes – with lime, peanuts, cilantro and a red curry sauce with coconut milk) – our best seller last night!

Mexican Bowl (rice, grilled corn, grilled peppers, cherry tomatoes, lettuce, avocado, black beans – with a cilantro lime sauce).

Veggie Bowl (quinoa, cucumber, avocado, cherry tomatoes, roasted peppers, carrots, snow peas, red cabbage, shredded beets – with a lemon tahini sauce and toasted sesame seeds)

You can add roasted chicken or seared tofu to any dish.

Then there’s dessert. We’ll have strawberry pie, key lime pie and our chocolate quinoa cake. . . and of course, we’ll have our iced coffees (so, so popular and refreshing given our hot weather) and our pressed coffee as well. We’ll meet you on the deck!

The “After Hours” Cafe is getting ready for this Friday and Saturday evening. Join us from 6:30 pm to 9:30 pm at The CountryWood – 36 White Avenue. Given the expected warm weather, we have decided to offer a selection of Buddha Bowls. These healthy options offer a combination of crunchy greens, grains, proteins, vegetables and tasty sauces. Pick your favorite:

We know there are many fabulous celebrations today and tonight for Canada’s 150th birthday. If you are looking for something a little more low key…check us out. Menu: Red: Homemade tomato soup with basil and garlic,
served with a ciabatta bun. (GF, DF and vegan)

White: Mac ‘n’ Cheese – made with Balderson’s aged
white cheddar, and tossed with fresh basil and cherry
tomatoes.

Red and White:

Fresh strawberries and whipped cream served over angel
food cake.

Traditional baked cheesecake with a succulent cherry
sauce and a hint of Disaronno. Topped with
whipped cream.

Gluten and dairy free cheesecake is also available with
your choice of berries.

We have a lovely evening, seating inside and out and
games for you to share with family and friends (including
our new outdoor bean bag game).

We decided this weekend is a Thai Curry menu. We have a green curry with coconut milk, green beans, bell peppers, and spinach. We also have a red curry with coconut milk, bell peppers and snow peas.Each is served with Thai Basmati rice. These are gluten and dairy free.

Also, we will have something for your sweet tooth. You can chose from a sour cream lemon pie in a graham crust, topped with whip cream or a triple berry fruit crisp (gluten and dairy free), topped with vanilla ice cream.

Things at the “After Hours“ Cafe were slow for the first couple of weeks. So tonight when many friends (old and new) showed up, we were hopping. We wanted to say thank you to all our guests who were very patient. We hope your meals and desserts were tasty. We will ensure that we have extra help going forward as it appears the word is spreading!

Also, we wanted to thank Aidan for being our busboy tonight. He did a great job and we couldn`t have done it without him!

We know Dad has a sweet tooth so we will have two cheesecakes tonight (an unbaked cherry and a traditional baked cheesecake, with a berry coulis and whip cream).

We are contemplating making a pie as well, so if you’re coming, would like a pie and have a favorite to request, just let us know. Right now, I’m leaning toward a wild blueberry with ice cream.

Over the years, many of our guests have asked if we could open evenings and weekends so they can return with family and friends. We’re pleased to tell you that The CountryWood Retreat & Conference Centre will now be open to the public on Friday and Saturday evenings from 6:30 to 9:30 p.m. We will be serving homemade pies, desserts and appetizers.

Flood 2013

June 20, 2013 – The Alberta flood hits Bragg Creek with very little warning. We are a couple of blocks from the actual river yet a small stream started flowing in our yard. Heather packed up the dog and two cats and drove away at the first sign of water. She and the pets evacuated in less than 10 minutes and the water was a foot deep when she left for higher ground.

A few days later we were allowed back on the property and the volunteers started flowing as forcefully as the water. One day alone, we had 50 helpers. Family and friends showed up not just from Calgary, but also from Sylvan Lake and even the U.S.    In spite of our best efforts to just clean-up and move back in, in the end the damage was too severe. We ended up gutting the main floor of our cabin (this is our home and also houses our commercial kitchen). Somehow the 2 – 3 feet of water on the property did not enter into The CountryWood meeting space. Great news!

Shortly after our demolition stage our contractor quit so family and friends pitched to work on the rebuild. In particular, our friend Shelly and Dad Marlin have been amazing. Shelly started helping while she was still on crutches after recovering from surgery for a badly broken leg.  She ended up being our on-site carpenter – building everything from walls to doorways to drop ceilings. Not bad for a cardiac surgery nurse!

Marlin is a retired firefighter who just happens to have a built a house or two in his day. Restoring the kitchen and building cabinets from scratch became a father-daughter project for Marlin and Heather.

262People helped with everything from painting and sanding to paperwork and gardening.  Neighbours manned the local response centre and ensured we had volunteers, equipment and meals. There were seriously so many people helping that we lost track. You know who you are and you are amazing. Eight months later we are back in our home and back in business because of you!! We are SO grateful.
